Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and diced onion and cook until the beef is completely browned, breaking it into small crumbles as it cooks.
- Drain the excess grease, then transfer the cooked beef and onion to the slow cooker.
- Add the undrained Rotel tomatoes, diced green bell pepper, taco seasoning, beef broth, and cubed cream cheese.
- Gently stir to distribute the ingredients. Cover and cook on LOW for 2–3 hours, stirring occasionally, until the cream cheese has completely melted into the beef mixture.
- Add the shredded cheddar cheese and stir until evenly incorporated.
- Cover and continue cooking for another 15–20 minutes, or until the cheddar has melted and the taco filling is hot and creamy.
- If the filling is thinner than desired, remove the lid and let it cook for an additional 15–20 minutes, stirring occasionally, until some of the excess moisture evaporates.
- Warm the flour or corn tortillas just before serving.
- Spoon a generous amount of the creamy Rotel beef mixture into each tortilla.
- Finish with sour cream, cilantro, avocado, shredded lettuce, extra cheese, or your favorite taco toppings. Serve immediately.
Variations
- Spicy Rotel Tacos: Use hot Rotel and add sliced jalapeños or a pinch of cayenne pepper.
- Pepper Jack: Replace some of the cheddar with Pepper Jack for additional heat and an extra-creamy melt.
- Beef and Bean: Stir in drained black beans or pinto beans for a heartier filling.
- Corn and Beef: Add a cup of corn kernels for sweetness and texture.
- Ground Turkey: Substitute ground turkey for the beef for a lighter variation.
- Crispy Tacos: Fill the tortillas with the finished beef mixture, fold them, and toast both sides in a lightly greased skillet until golden and crisp.
Tips
- Brown and drain the ground beef before slow cooking. Removing excess fat prevents the cheese sauce from becoming greasy.
- Add the liquid from the Rotel cans because it contributes flavor and helps create the creamy sauce.
- Cut the cream cheese into cubes so it melts more quickly and evenly.
- Freshly shredded cheddar tends to melt more smoothly than packaged pre-shredded cheese.
- For a thicker filling, leave the slow cooker uncovered during the final 15–20 minutes.
- Warm corn tortillas before filling them to make them more flexible and less likely to crack.
- Keep the finished filling on the slow cooker’s WARM setting for serving, stirring occasionally to maintain a smooth consistency.
