Instructions
- Heat the vegetable oil in a large soup pot over medium heat. Add the shell pasta and toast, stirring frequently, until lightly golden, about 3 to 4 minutes. Remove the pasta with a slotted spoon and set aside.
- In the same pot, add the ground beef and cook until browned, breaking it into small crumbles as it cooks. Drain any excess grease if necessary.

- Pour in the beef broth and stir in the bouillon powder (if using), cumin, smoked paprika, oregano, salt, and black pepper. Bring the soup to a gentle boil.
- Return the toasted shell pasta to the pot along with the frozen mixed vegetables. Reduce the heat to a simmer and cook for 10 to 12 minutes, or until the pasta is tender.
- Taste and adjust the seasoning as needed. Stir in the chopped fresh cilantro just before serving.
- Ladle the soup into bowls and garnish with avocado, queso fresco, extra cilantro, and a squeeze of fresh lime juice. Serve with warm tortillas on the side.
