Ultimate Chicken Hashbrown Casserole

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or nonstick cooking spray.
  2. In a large mixing bowl, combine the cream of chicken soup, sour cream, milk, 2 tablespoons melted butter, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir until smooth and creamy.
  3. Add the cooked chicken, thawed hashbrowns, diced onion, 1½ cups cheddar cheese, and half of the crumbled bacon. Fold everything together until the potatoes and chicken are evenly coated with the creamy mixture.
  4. Transfer the mixture to the prepared baking dish. Spread it into an even layer without pressing it down too firmly.
  5. Sprinkle the remaining ½ cup cheddar cheese evenly over the casserole.
  6. In a small bowl, combine the crushed cornflakes or buttery crackers with 2 tablespoons melted butter. Toss until evenly coated.
  7. Scatter the buttery crumbs over the cheese, then finish with the remaining crumbled bacon.
  8. Bake uncovered for 40–45 minutes, or until the casserole is piping hot and bubbling around the edges and the topping is crisp and golden brown.
  9. For an extra-crispy finish, broil for 1–2 minutes at the end of baking. Watch carefully because the buttery topping can brown very quickly.
  10. Remove from the oven and allow the casserole to rest for 5–10 minutes. Garnish with chopped green onions, if desired, and serve warm.

Variations

  • Ranch Chicken: Add 1–2 tablespoons dry ranch seasoning to the creamy mixture for a chicken-bacon-ranch variation.
  • Broccoli Cheddar: Fold 2 cups of lightly steamed broccoli florets into the filling.
  • Spicy: Add diced jalapeños and replace some of the cheddar with Pepper Jack cheese.
  • Extra Bacon: Increase the bacon and reserve plenty for sprinkling over the crispy topping.
  • Turkey Hashbrown Casserole: Substitute cooked turkey for the chicken, making this an excellent option for holiday leftovers.
  • Vegetable Loaded: Add sautéed mushrooms, bell peppers, peas, or spinach to the filling.

Tips

  • Thaw the hashbrowns completely before assembling the casserole. Frozen potatoes can release excess moisture and increase the baking time.
  • If the thawed hashbrowns seem particularly wet, gently blot them with paper towels before adding them to the filling.
  • Rotisserie chicken is an excellent shortcut and gives the casserole plenty of flavor with minimal preparation.
  • Cook the bacon until crisp before adding it so it maintains some texture after baking.
  • Freshly shredded cheddar melts especially well and creates a smoother, creamier casserole.
  • Don’t pack the casserole mixture too tightly into the baking dish. Spreading it gently helps it heat more evenly.
  • Broil only at the very end and watch continuously. Cornflakes, crackers, bacon, and cheese can go from golden to burned within moments.
