Instructions
- Prepare the beef. Heat a large skillet over medium-high heat. Add the ground beef and onion, breaking the beef into small crumbles as it cooks. Cook for 6–8 minutes, until browned and the onion is tender. Drain excess grease if needed.
- Season the filling. Add the garlic, taco seasoning, chili powder, cumin, smoked paprika, salt, and black pepper. Stir for about 30 seconds until fragrant.
- Add the tomatoes. Stir in the diced tomatoes with green chiles and water. Reduce the heat to medium-low and simmer for 5–7 minutes, allowing the mixture to thicken and the flavors to come together.
- Build the first layer. Spread a generous layer of tortilla chips over a large platter or shallow serving dish.
- Add the beef and cheese. Spoon about half of the seasoned beef over the chips, followed by half of the cheddar and Monterey Jack.
- Repeat the layers. Add another layer of tortilla chips, followed by the remaining beef and cheese. For the best texture, keep the center generously filled while leaving some chips visible around the edges.
- Melt the cheese. Place the assembled haystack under the broiler for 1–2 minutes, just until the cheese is melted and bubbling. Watch closely to prevent the chips from burning.
- Add the fresh toppings. Scatter the corn, shredded lettuce, and diced tomatoes over the warm cheese and beef.
- Finish and serve. Dollop with sour cream and sprinkle generously with fresh cilantro. Add jalapeños, avocado, salsa, or any other desired toppings.
- Serve immediately. Bring the loaded haystack to the table while the cheese is still warm and melted.
Variations
Chicken Taco Haystack
Replace the ground beef with shredded cooked chicken. Toss it with the same taco seasoning mixture and a splash of salsa for a juicy, flavorful filling.
Black Bean Taco Haystack
Replace half or all of the beef with seasoned black beans. Add corn and diced avocado for a hearty meatless version.
Spicy Loaded Haystack
Add diced jalapeños and extra chili powder to the beef, then finish with your favorite hot salsa or sliced fresh chiles.
Supreme Taco Haystack
Pile on black olives, avocado, green onions, jalapeños, and a drizzle of salsa alongside the classic toppings.
Tips
- Layer just before serving: Tortilla chips soften quickly once covered with hot toppings, so assemble the haystack as close to serving time as possible.
- Use freshly shredded cheese: It melts more smoothly than many pre-shredded varieties and creates a better cheese layer.
- Keep the beef thick: Simmer the taco meat until most of the excess liquid has cooked away so the chips do not become soggy.
- Balance hot and cold toppings: Warm beef and melted cheese paired with cool lettuce, tomatoes, and sour cream give the dish its best contrast.
- Make it a party dish: Set out the toppings separately and let everyone build individual taco haystacks with their preferred combination.
