Instructions
- Carefully pat the roasted and peeled Hatch chiles dry. Make a small slit in each chile if needed and gently remove any remaining seeds without tearing the flesh.
- Stuff each chile with shredded Monterey Jack or Oaxaca cheese. Avoid overfilling, then gently press the opening closed to help contain the cheese during frying.
- Place the 1 cup of flour in a shallow dish and season it with some of the salt and black pepper. Lightly dredge each stuffed chile in the flour, shaking off any excess. This thin coating helps the egg batter adhere.
- Place the egg whites in a clean mixing bowl. Using an electric mixer, beat until they form stiff, glossy peaks.
- In a separate bowl, whisk the egg yolks with 1 tablespoon flour and a pinch of salt until smooth.
- Gently fold the yolk mixture into the beaten egg whites using a spatula. Work carefully to preserve as much air as possible so the finished coating remains fluffy and light.
- Pour enough oil into a large, heavy skillet to create a shallow frying layer. Heat over medium to medium-high heat until the oil reaches approximately 350°F (175°C).
- Working one at a time, dip each flour-coated chile into the egg batter, turning gently until completely coated.
- Carefully place the battered chiles into the hot oil. Fry in batches for approximately 2–3 minutes per side, or until puffed and deep golden brown. Avoid overcrowding the skillet.
- Transfer the fried rellenos to a wire rack set over a baking sheet or a paper towel-lined plate to remove excess oil.
- Serve immediately while the exterior is crisp and the cheese inside is hot and melted. Pair with salsa, Mexican crema, rice, or beans.
Variations
- Queso Fresco: Mix a little crumbled queso fresco with the Monterey Jack for a creamy, slightly tangy filling.
- Oaxaca Cheese: Use Oaxaca exclusively for an especially stretchy, melty center.
- Meat-Filled: Add a small amount of cooked seasoned ground beef, shredded chicken, or pork along with the cheese.
- Extra Spicy: Stuff the chiles with Pepper Jack cheese or add finely diced jalapeños to the filling.
- Saucy Rellenos: Serve the finished peppers over warm roasted tomato salsa or salsa roja.
- Mixed Cheese: Combine Monterey Jack, Oaxaca, and queso fresco for a richer, more complex filling.
Tips
- Pat the roasted chiles thoroughly dry before dredging. Excess moisture can prevent the flour and batter from sticking properly.
- Handle peeled Hatch chiles gently because they become delicate after roasting.
- Don’t overstuff the peppers, as excess cheese can escape into the frying oil.
- Use a completely clean, grease-free bowl when whipping the egg whites for maximum volume.
- Fold the yolks into the whites gently rather than vigorously stirring them. Keeping the batter airy produces the characteristic fluffy chile relleno coating.
