Hatch Chile Rellenos are a delicious way to showcase the distinctive flavor of roasted Hatch green chiles. Stuffed generously with melting cheese, coated in a light and airy egg batter, and fried until beautifully golden, these homemade rellenos deliver an irresistible combination of smoky, creamy, and crispy textures.

The Hatch chiles are the star of this recipe. Roasting brings out their naturally earthy, slightly sweet flavor while adding a subtle smokiness. Depending on the variety you choose, Hatch chiles can range from pleasantly mild to seriously spicy, making it easy to customize the heat level.

Inside each chile is a generous helping of Monterey Jack or Oaxaca cheese. Both cheeses melt beautifully, creating the gooey center that makes a freshly fried chile relleno so satisfying.   • 1 cup all-purpose flour, for dredging
  • 1 teaspoon salt, divided or to taste
  • 1 teaspoon freshly ground black pepper
  • Neutral cooking oil, such as vegetable or canola oil, for frying
  • Salsa, for serving, optional
  • Mexican crema, for serving, optional
