Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the shredded chicken, half of the shredded cheese, diced green chiles, garlic powder, onion powder, cumin, salt, and black pepper. Stir until evenly mixed.
- Spread 2 to 3 tablespoons of the green enchilada sauce across the bottom of the prepared baking dish to prevent sticking.
- Divide the chicken mixture evenly among the tortillas. Roll each tortilla tightly and place seam-side down in the baking dish.
- In a separate bowl, whisk together the remaining green enchilada sauce and sour cream until smooth. Pour the mixture evenly over the enchiladas.
- Sprinkle the remaining shredded cheese over the top.
- Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
- Let the enchiladas rest for about 5 minutes before serving. Garnish with fresh cilantro or sliced jalapeños, if desired.
