Easy Queso Chicken Enchiladas

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a bowl, toss the shredded chicken with the adobo seasoning, garlic powder, onion powder, black pepper, and salt. Set aside.
  3. In a saucepan, melt the butter over medium heat. Add the garlic and cook for 30 seconds until fragrant.
  4. Whisk in the flour and cook for 1 minute to form a roux.
  5. Slowly whisk in the chicken broth, followed by the heavy cream, stirring until smooth.
  6. Reduce heat to low and stir in the white American cheese and Monterey Jack cheese until fully melted and smooth.
  7. Stir in the cumin and half of the diced tomatoes. Simmer for 2–3 minutes until slightly thickened.
  8. Spread about ½ cup of the queso sauce into the bottom of the prepared baking dish.
  9. Fill each tortilla with shredded chicken and a small handful of cheese. Roll tightly and place seam-side down in the baking dish.
  10. Pour the remaining queso sauce evenly over the enchiladas.
  11. Sprinkle the remaining Monterey Jack cheese over the top.
  12. Bake for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.
  13. Let the enchiladas rest for 5 minutes before serving.
  14. Top with the remaining diced tomatoes and chopped parsley before serving.

Variations

  • Use shredded rotisserie chicken for an easy time-saving shortcut.
  • Add a can of diced green chiles to the queso sauce for extra flavor and a mild kick.
  • Swap Monterey Jack for Pepper Jack to add a little heat.
  • Mix cooked bacon into the chicken filling for an extra savory twist.

Tips

  • Shred the chicken while it’s still warm for the most tender texture.
  • Warm the tortillas before rolling to prevent cracking.
  • Let the enchiladas rest for 5–10 minutes after baking so the sauce thickens slightly before serving.
  • Serve with Mexican rice, refried beans, or a crisp green salad for a complete restaurant-style meal.

Storage and Reheating

These enchiladas store and reheat exceptionally well, which makes them a great make-ahead option for busy weeks.

  • Refrigerator: Store leftovers in an airtight container for up to 4 days.
  • Freezer: Assemble the enchiladas in a freezer-safe dish, cover tightly, and freeze unbaked for up to 3 months. Thaw overnight in the refrigerator before baking as directed, adding a few extra minutes if needed.
  • Reheating: Warm individual portions in the microwave in 30-second intervals, or cover the baking dish with foil and reheat in a 350°F oven for 15–20 minutes until heated through. Adding a splash of chicken broth or cream before reheating helps keep the sauce from drying out.
