Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a bowl, toss the shredded chicken with the adobo seasoning, garlic powder, onion powder, black pepper, and salt. Set aside.
- In a saucepan, melt the butter over medium heat. Add the garlic and cook for 30 seconds until fragrant.
- Whisk in the flour and cook for 1 minute to form a roux.
- Slowly whisk in the chicken broth, followed by the heavy cream, stirring until smooth.
- Reduce heat to low and stir in the white American cheese and Monterey Jack cheese until fully melted and smooth.
- Stir in the cumin and half of the diced tomatoes. Simmer for 2–3 minutes until slightly thickened.
- Spread about ½ cup of the queso sauce into the bottom of the prepared baking dish.
- Fill each tortilla with shredded chicken and a small handful of cheese. Roll tightly and place seam-side down in the baking dish.
- Pour the remaining queso sauce evenly over the enchiladas.
- Sprinkle the remaining Monterey Jack cheese over the top.
- Bake for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Let the enchiladas rest for 5 minutes before serving.
- Top with the remaining diced tomatoes and chopped parsley before serving.
Variations
- Use shredded rotisserie chicken for an easy time-saving shortcut.
- Add a can of diced green chiles to the queso sauce for extra flavor and a mild kick.
- Swap Monterey Jack for Pepper Jack to add a little heat.
- Mix cooked bacon into the chicken filling for an extra savory twist.
Tips
- Shred the chicken while it’s still warm for the most tender texture.
- Warm the tortillas before rolling to prevent cracking.
- Let the enchiladas rest for 5–10 minutes after baking so the sauce thickens slightly before serving.
- Serve with Mexican rice, refried beans, or a crisp green salad for a complete restaurant-style meal.
Storage and Reheating
These enchiladas store and reheat exceptionally well, which makes them a great make-ahead option for busy weeks.
- Refrigerator: Store leftovers in an airtight container for up to 4 days.
- Freezer: Assemble the enchiladas in a freezer-safe dish, cover tightly, and freeze unbaked for up to 3 months. Thaw overnight in the refrigerator before baking as directed, adding a few extra minutes if needed.
- Reheating: Warm individual portions in the microwave in 30-second intervals, or cover the baking dish with foil and reheat in a 350°F oven for 15–20 minutes until heated through. Adding a splash of chicken broth or cream before reheating helps keep the sauce from drying out.
