Instructions
- Lightly grease the inside of a large slow cooker. Arrange the chicken breasts in an even layer across the bottom.
- In a medium bowl, combine the softened cream cheese, sour cream, cream of chicken soup, ranch seasoning, garlic powder, onion powder, and black pepper. Mix until well combined.
- Spread the cream cheese mixture evenly over the chicken breasts.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
- Transfer the cooked chicken to a plate or cutting board. Shred it with two forks, then return it to the slow cooker.
- Stir the shredded chicken into the creamy sauce until evenly coated. Add 1 cup of the cheddar cheese and the crumbled bacon, if using, and stir again.
- Sprinkle the remaining 1 cup cheddar cheese and the mozzarella or Monterey Jack evenly over the casserole.
- Cover and continue cooking for another 15–20 minutes, or until the cheese has completely melted.
- For a thicker consistency, remove the lid during the final 10–15 minutes and allow some of the excess moisture to evaporate.
- Sprinkle with chopped fresh chives or parsley and serve hot.
Variations
- Bacon Ranch: Add the crumbled bacon and reserve a little extra for sprinkling over the finished casserole.
- Spicy: Mix in diced jalapeños or a pinch of red pepper flakes and use Pepper Jack cheese.
- Broccoli Cheddar: Stir in cooked broccoli florets after shredding the chicken for a complete chicken-and-vegetable meal.
- Mushroom: Add sautéed mushrooms for extra savory flavor.
- Garlic Parmesan: Replace some of the cheddar with freshly grated Parmesan and add an extra clove or two of minced garlic.
- Loaded Chicken: Finish each serving with bacon, chives, extra cheese, and a small spoonful of sour cream.
Tips
- Soften the cream cheese before mixing so it blends more smoothly with the sour cream and condensed soup.
- Ranch seasoning and cream of chicken soup can both contain significant salt, so taste the finished casserole before adding any additional salt.
- Avoid overcooking the chicken. Begin checking it toward the lower end of the recommended cooking range, particularly when using the HIGH setting.
- Shred the chicken while it’s still warm, then immediately return it to the sauce so it absorbs the creamy mixture.
- Freshly shredded cheese generally melts more smoothly than packaged pre-shredded cheese.
- For an extra-thick casserole, cook uncovered for the final 10–15 minutes after the chicken has been shredded.
- Serve over rice, egg noodles, mashed potatoes, or warm buttery biscuits to make the creamy sauce go further.
