Crispy Beef Taquitos
- In a skillet over medium-high heat, cook the ground beef until browned.
- Drain excess grease and stir in the taco seasoning, following the packet directions.
- Remove from heat and mix in the cream cheese and shredded cheddar until melted and well combined.
- Warm the tortillas in the microwave for 20–30 seconds to make them pliable.
- Spoon a portion of the beef filling onto the lower third of each tortilla.
- Roll each tortilla tightly around the filling and secure with a toothpick.
- Whisk together the sour cream, mayonnaise, minced chipotle peppers, lime juice, garlic, and salt to make the chipotle dipping sauce.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Place the taquitos seam-side down in the hot oil and fry for 2–3 minutes per side, until golden and crispy all over.
- Drain on paper towels, remove toothpicks, and serve warm with the chipotle dipping sauce for dunking.

- Swap the ground beef for shredded chicken or seasoned shredded pork.
