Instructions
- Preheat the oven to 375°F (190°C). Lightly coat a 9×13-inch baking dish with cooking spray or butter.
- In a medium bowl, combine the shredded chicken with 1 cup Monterey Jack cheese and ½ cup cheddar cheese. Toss until evenly combined.
- Divide the chicken and cheese mixture evenly among the flour tortillas. Roll each tortilla snugly around the filling and arrange them seam-side down in the prepared baking dish.
- Melt the butter in a medium saucepan over medium heat. Add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
- Sprinkle in the flour and whisk continuously for about 1 minute. Gradually pour in the chicken broth while whisking to create a smooth sauce without lumps.
- Continue cooking for 3–5 minutes, stirring frequently, until the sauce has thickened enough to lightly coat the back of a spoon.
- Remove the saucepan from direct heat. Allow it to cool for a minute, then stir in the sour cream, diced green chiles, cumin, onion powder, garlic powder, salt, and black pepper. Mix until smooth and creamy.
- Pour the sauce evenly over the rolled enchiladas, making sure the tortillas are generously covered. Sprinkle the remaining Monterey Jack and cheddar cheese over the top.
- Bake uncovered for 20–25 minutes, or until the sauce is bubbling and the cheese is completely melted. For a deeper golden finish, broil for 1–2 minutes, watching carefully to prevent burning.
- Remove the enchiladas from the oven and let them rest for about 5 minutes. Garnish with chopped green onions or chives and serve warm with the creamy sauce spooned over each portion.
Variations
- Spicy Green Chile: Add diced jalapeños or a pinch of cayenne pepper to the cream sauce.
- Pepper Jack: Replace some or all of the Monterey Jack with Pepper Jack for additional heat.
- Rotisserie Chicken: Use shredded rotisserie chicken for an especially quick weeknight version.
- Corn and Black Bean: Add drained corn and black beans to the chicken filling for extra texture and heartiness.
- Spinach Chicken: Mix sautéed spinach into the filling for an easy vegetable addition.
- Smoky Chicken: Add a small amount of finely chopped chipotle pepper in adobo to the chicken mixture.
Tips
- Bring the sour cream close to room temperature before preparing the sauce. Cold sour cream is more likely to separate when added to a hot mixture.
- Remove the sauce from direct heat before stirring in the sour cream, and don’t allow it to boil afterward. This helps keep the sauce silky and smooth.
- Avoid overfilling the tortillas so they remain tightly rolled during baking.
- Freshly shredded cheese generally melts more smoothly than packaged pre-shredded cheese.
- If using rotisserie chicken, taste the filling before adding additional salt because both the chicken and cheese may already be well seasoned.
- Let the enchiladas rest for about 5 minutes after baking. The sauce will thicken slightly, making the enchiladas easier to serve.
- If broiling the cheese, stay near the oven. It can go from beautifully golden to burned very quickly.
