Instructions
1. Prepare the sauce. In a small bowl, combine the mayonnaise, ketchup, mustard, chopped pickles, black pepper, and smoked paprika. Stir until smooth, then refrigerate while preparing the beef and onions.
2. Caramelize the onions. Melt 2 tablespoons of butter in a large skillet over medium-low heat. Add the sliced onions and cook for 15–20 minutes, stirring frequently, until soft, golden, and sweet. Transfer the onions to a plate and set aside.
3. Cook the beef. In the same skillet, add the ground beef over medium-high heat. Break it into small crumbles and cook for 6–8 minutes, until browned and cooked through. Drain excess grease if necessary.
4. Season the filling. Stir the Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper into the beef. Return the caramelized onions to the skillet and mix thoroughly. Remove from the heat.
5. Assemble the tacos. Spread a thin layer of the creamy sauce over one side of each flour tortilla. Add a portion of the beef and onion mixture to one half, followed by a generous handful of Monterey Jack cheese. Fold the tortillas in half to enclose the filling.
6. Toast until crispy. Wipe out the skillet if needed and melt a small amount of butter over medium heat. Place the folded tacos in the skillet, working in batches if necessary. Cook for 2–3 minutes per side, pressing gently with a spatula, until the tortillas are golden brown and the cheese is melted.
7. Finish and serve. Transfer the tacos to a serving plate and sprinkle with sliced green onions, if desired. Serve immediately with extra creamy sauce on the side.
Variations
-
Classic patty melt flavor: Add a slice of Swiss cheese alongside the Monterey Jack for a more traditional diner-style flavor.
-
Spicy patty melt tacos: Add sliced jalapeños, a dash of hot sauce, or a pinch of cayenne to the beef mixture.
-
Bacon cheeseburger version: Add 4 slices of cooked, crumbled bacon to the beef and onion filling.
-
Mushroom and onion tacos: Sauté 8 ounces of sliced mushrooms with the onions for an earthy, savory variation.
-
Extra cheesy tacos: Sprinkle a little additional cheese directly onto the skillet before placing the folded tortilla on top. Let it crisp for a minute before flipping for a golden, cheese-crusted exterior.
Tips
-
Use thinly sliced onions. Thin slices caramelize more evenly and distribute their sweetness throughout the filling.
-
Don’t rush the onions. Medium-low heat allows their natural sugars to develop without burning. The extra time makes a noticeable difference in flavor.
-
Shred the cheese yourself. Freshly shredded Monterey Jack melts more smoothly than many packaged shredded cheeses.
-
Avoid overfilling. Too much beef or cheese can make the tortillas difficult to fold and cause the filling to spill during cooking.
-
Keep the skillet at medium heat. High heat may brown the tortillas before the cheese melts. Moderate heat creates a crisp exterior with a gooey center.
-
Serve immediately. These tacos are best straight from the skillet, when the tortillas are crisp and the cheese is still stretchy.
