Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or a thin layer of oil.
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the ground beef and cook until browned, breaking it into small crumbles with a spoon. Drain any excess grease if necessary.
- Stir in the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 2 more minutes so the spices become fragrant and evenly coat the beef.
- Warm the refried beans until smooth and spreadable. Heat the corn tortillas briefly in a skillet or microwave until soft and pliable.
- Spread a thin layer of refried beans over each tortilla. Add a spoonful of the seasoned beef and sprinkle with a small handful of shredded Mexican cheese.
- Roll each tortilla tightly and arrange them seam-side down in the prepared baking dish.
- Pour the red enchilada sauce evenly over the rolled enchiladas, making sure they are fully covered. Sprinkle the remaining shredded cheese evenly over the top.
- Bake uncovered for 25–30 minutes, or until the cheese is melted, bubbly, and lightly golden around the edges.
- Remove from the oven and let the enchiladas rest for about 5 minutes. Garnish with fresh cilantro and serve with sour cream and your favorite toppings.
