If you’re looking for the ultimate comfort food that’s hearty, cheesy, and packed with bold Southwestern flavors, these Cheesy Beef & Bean Enchiladas are sure to become a family favorite. Soft corn tortillas are filled with seasoned ground beef, creamy refried beans, and plenty of melty cheese before being smothered in rich enchilada sauce and baked until bubbling and golden.

The savory beef filling is seasoned with a blend of classic spices, while the refried beans add a creamy texture and satisfying richness that perfectly complements the beef. Every bite is loaded with layers of flavor, making these enchiladas a delicious and filling meal that’s perfect for busy weeknights or weekend gatherings.

A generous layer of enchilada sauce keeps the tortillas tender and flavorful as they bake, while a blanket of melted Mexican cheese blend creates a perfectly gooey, golden topping. Finished with fresh cilantro and your favorite garnishes, this dish is as beautiful as it is delicious.

Serve these enchiladas with Mexican rice, chips and salsa, or a crisp green salad for a complete meal. They’re also great for meal prep since leftovers reheat beautifully, making lunch or dinner the next day just as satisfying.
