Better-Than-Taco Bell Crispy Tacos

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3 minutes, or until softened. Add the garlic and cook for another 30 seconds until fragrant.
  2. Add the ground beef and cook, breaking it into small crumbles, until completely browned. Carefully drain any excess grease.
  3. Season the beef with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well and cook for another 2 minutes so the seasonings can develop their flavor.
  4. Warm the corn tortillas briefly in a dry skillet or microwave until soft and pliable. This makes them easier to fold without cracking.
  5. Sprinkle Monterey Jack and cheddar over one half of each tortilla. Spoon a modest amount of seasoned beef over the cheese, then add another small layer of cheese. Fold each tortilla in half and gently press to close.
  6. Heat the vegetable oil in a clean skillet over medium heat. Working in batches, add the tacos without overcrowding the pan. Cook for 2–3 minutes per side until the tortillas are crisp and golden and the cheese has completely melted.
  7. Transfer the cooked tacos to a wire rack or paper towel-lined plate while you fry the remaining tacos.
  8. For the chipotle sauce, whisk together the mayonnaise, sour cream, minced chipotle peppers, adobo sauce, lime juice, garlic powder, smoked paprika, salt, and black pepper until creamy and well combined.
  9. Serve the crispy beef tacos immediately with the creamy chipotle sauce and your choice of fresh toppings.

Variations

  • Spicy Beef Tacos: Add cayenne pepper or diced jalapeños to the ground beef.
  • Chicken Tacos: Substitute seasoned ground or shredded chicken for the beef.
  • Pepper Jack Tacos: Replace Monterey Jack with Pepper Jack for extra heat.
  • Bean and Cheese: Replace the beef with seasoned refried or black beans for a meatless version.
  • Flour Tortillas: Small flour tortillas can be substituted for corn tortillas for a softer, slightly chewier shell.
  • Avocado Sauce: Blend avocado into the chipotle sauce for an extra-creamy variation.

Tips

  • Don’t overfill the tortillas. A thinner layer of filling makes them easier to fold and helps the tortillas become evenly crisp.
  • Warm corn tortillas before assembling to reduce the chance of cracking.
  • Keep the skillet at medium heat. If it’s too hot, the tortillas can burn before the cheese melts.
  • Freshly shredded cheese generally melts more smoothly than pre-shredded varieties.
  • Cook the tacos in batches rather than crowding the skillet, which helps maintain an even temperature.
  • For maximum crunch, place finished tacos on a wire rack instead of stacking them on a plate, where trapped steam can soften the tortillas.
  • Make the chipotle sauce ahead and refrigerate it until serving so the smoky, spicy flavors have time to develop.
