Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Warm the red enchilada sauce in a saucepan over low heat until heated through.
- In a large bowl, combine the shredded beef, diced onion, garlic powder, cumin, smoked paprika, salt, black pepper, and 1/2 cup of the warm enchilada sauce. Mix well.
- Heat the vegetable oil in a small skillet over medium heat. Lightly fry each corn tortilla for about 10 seconds per side, just until soft and pliable. Drain on paper towels.
- Dip each softened tortilla into the warm enchilada sauce to coat both sides.
- Spoon the shredded beef mixture down the center of each tortilla. Sprinkle with a small amount of the Mexican cheese blend, then roll tightly and place seam-side down in the prepared baking dish.
- Pour the remaining enchilada sauce evenly over the enchiladas.
- Sprinkle the remaining Mexican cheese blend and the shredded cheddar cheese evenly over the top.
- Bake for 20 to 25 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Let the enchiladas rest for 5 minutes before serving. Garnish with chopped cilantro and your favorite toppings.
