Pizza Lasagna Quesadilla

Instructions

  1. Spread the softened butter evenly over one side of each tortilla.
  2. Heat a large nonstick skillet or griddle over medium heat. Place one tortilla in the skillet with the buttered side facing down.
  3. Sprinkle half of the mozzarella and provolone cheeses evenly over the tortilla.
  4. Spread the pizza sauce over the cheese, leaving about a 1/2-inch border around the edges.
  5. Arrange the pepperoni slices evenly over the sauce. Sprinkle with the Parmesan cheese, Italian seasoning, garlic powder, and crushed red pepper flakes, if using.
  6. Top with the remaining mozzarella and provolone cheeses.
  7. Place the second tortilla on top with the buttered side facing up.
  8. Cook for 3 to 4 minutes, or until the bottom tortilla is golden brown and crispy.
  9. Carefully flip the quesadilla using a large spatula and cook for another 3 to 4 minutes, until the second side is golden brown and the cheese is fully melted.
  10. Let the quesadilla rest for 2 minutes, then slice into wedges and serve with warm pizza sauce for dipping.

Variations

  • Add cooked Italian sausage, bacon, or grilled chicken for extra protein.
  • Mix sautéed mushrooms, onions, or bell peppers into the filling.
  • Swap the pepperoni for ham and pineapple for a Hawaiian-inspired version.
  • Use fresh mozzarella for an extra creamy texture.
  • Add sliced black olives or banana peppers for more pizza-shop flavor.
  • Make it vegetarian by replacing the pepperoni with your favorite vegetables.
  • Sprinkle fresh basil over the finished quesadilla for a fresh Italian touch.

Tips

  • Use freshly shredded mozzarella and provolone for the smoothest melt.
  • Cook over medium heat so the tortillas become crispy before the cheese overcooks.
  • Leave a small border around the edges to prevent the sauce from leaking during cooking.
  • For an extra crispy cheese crust, sprinkle grated Parmesan directly into the skillet before adding the tortilla.
  • Let the quesadilla rest for a couple of minutes before slicing to help the cheese stay inside.
  • Serve with warm pizza sauce, ranch dressing, or garlic butter for dipping.
  • Leftovers can be reheated in a skillet or air fryer for the crispiest results.
