Instructions
- Roast the poblano peppers over an open flame, grill, or under the broiler until blistered on all sides. Transfer them to a covered bowl or sealed bag and let steam for 10 minutes.
- Peel away the charred skins, then carefully make a slit down one side of each pepper and remove the seeds while keeping the stems intact.
- In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned. Drain any excess grease.
- Stir in the minced garlic, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 2 minutes, then remove from the heat and let cool slightly.
- Combine the Oaxaca, Monterey Jack, and cheddar cheeses in a bowl.
- Stuff each poblano pepper with the seasoned beef and a generous handful of the cheese mixture. Secure the opening with toothpicks.
- For best results, place the stuffed peppers in the freezer for 15 minutes before battering.
- Heat about 2 inches of vegetable oil in a heavy pot or deep skillet to 350°F (175°C).
- In a clean bowl, beat the egg whites until stiff peaks form.
- In another bowl, whisk together the egg yolks, Mexican lager (or sparkling water), flour, cornstarch, baking powder, and salt until smooth.
- Gently fold the whipped egg whites into the batter until fully incorporated, keeping as much air in the mixture as possible.
- Dip each stuffed pepper into the batter, coating it completely.
- Carefully fry the peppers for 3–4 minutes per side, or until deeply golden and crispy. Transfer to a wire rack to drain.
- While the peppers cook, heat the olive oil in a saucepan over medium heat. Sauté the onion until softened, then add the garlic and cook for 30 seconds.
- Stir in the tomato sauce, chicken broth, tomato paste, chili powder, cumin, oregano, salt, and pepper. Simmer for 15 minutes until slightly thickened.
- Spoon the warm ranchero sauce onto serving plates and place the crispy chile rellenos on top.
- Finish with Mexican crema, pico de gallo, chopped cilantro, sliced green onions, crumbled cotija cheese, and fresh lime wedges before serving.

- Replace the ground beef with shredded chicken, carnitas, or spicy chorizo for a delicious twist.
- Add cooked Mexican rice or seasoned black beans to the filling for an even heartier chile relleno.
- Use Pepper Jack or Asadero cheese for extra spice and incredible meltability.
