Instructions
- Lightly grease the inside of a 6-quart slow cooker with cooking spray or a thin coating of butter.
- Add the cubed potatoes, sliced beef kielbasa, diced onion, and minced garlic to the slow cooker.
- In a medium bowl, whisk together the cream of chicken soup, sour cream, milk, smoked paprika, garlic powder, onion powder, black pepper, and salt until smooth.
- Pour the creamy mixture over the potatoes and kielbasa. Add 1½ cups of the shredded cheddar cheese and gently stir until everything is evenly coated.
- Scatter the small pieces of butter over the top. Cover the slow cooker and cook on LOW for 4–5 hours, or until the potatoes are completely fork-tender. Cooking times can vary slightly between slow cookers.
- Avoid frequently removing the lid or stirring during cooking. This helps maintain a consistent temperature and prevents the tender potatoes from breaking apart.
- During the final 15–20 minutes, sprinkle the remaining ½ cup cheddar cheese evenly over the top.
- Replace the lid and continue cooking until the cheese has completely melted and the sauce is hot and creamy.
- Taste and adjust the salt and black pepper as needed. Garnish with chopped fresh parsley and freshly cracked black pepper before serving.
