Crispy Tacos with Chipotle Dipping Sauce

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.
  4. Stir in the taco seasoning, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 2 minutes until fragrant.
  5. Remove the skillet from the heat and allow the filling to cool slightly.
  6. In a small bowl, whisk together the mayonnaise, sour cream, minced chipotle peppers, adobo sauce, lime juice, garlic powder, onion powder, and salt until smooth. Refrigerate until ready to serve.
  7. Spoon a portion of the beef onto one half of each tortilla and top with a generous handful of shredded cheese.
  8. Fold each tortilla in half, pressing gently to help it stay closed.
  9. Heat a thin layer of vegetable oil in a large skillet over medium heat.
  10. Cook the tacos in batches for 2–3 minutes per side until golden brown and crispy, gently pressing with a spatula as they cook.
  11. Transfer the tacos to a wire rack or paper towel-lined plate to drain.
  12. Serve immediately with the chilled chipotle dipping sauce.

Variations

  • Swap the ground beef for shredded chicken, carnitas, or seasoned ground turkey.
  • Add diced jalapeños or green chiles inside the tacos for extra heat.
  • Use Pepper Jack cheese for a spicier, creamier filling.
  • Mix cooked black beans or corn into the beef for added texture and flavor.

Tips

  • Warm the tortillas slightly before filling to prevent them from cracking when folded.
  • Avoid overfilling the tacos so they stay sealed and crisp evenly.
  • Fry over medium heat to achieve a golden, crispy exterior without burning the tortillas.
  • Make the chipotle dipping sauce a few hours ahead of time to allow the flavors to meld for an even richer taste.
