Creamy Cajun Corn on the Cob

Instructions

  1. Melt the butter in a large, deep skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, stirring constantly, until fragrant.
  2. Pour in the heavy cream and chicken broth. Stir in the Cajun seasoning, smoked paprika, onion powder, garlic powder, black pepper, and cayenne pepper, if using.
  3. Add the corn pieces to the skillet. Turn them several times with tongs until evenly coated in the seasoned cream mixture.
  4. Reduce the heat to medium-low and cover the skillet. Simmer for 12–15 minutes, turning the corn every few minutes so it cooks evenly and absorbs the flavors of the sauce.
  5. Once the corn is tender, remove the lid and stir the grated Parmesan into the sauce. Simmer uncovered for another 2–3 minutes, stirring occasionally, until the cheese has melted and the sauce is creamy and slightly thickened.
  6. Stir in the fresh lemon juice. Taste the sauce and adjust with salt, additional Cajun seasoning, or cayenne as needed.
  7. Spoon the creamy Cajun sauce generously over the hot corn. Sprinkle with shredded Parmesan or mozzarella and finish with chopped fresh parsley.
  8. Serve immediately while hot, with plenty of extra Cajun cream sauce spooned over each piece.

Variations

  • Extra Spicy: Increase the cayenne or add a few dashes of your favorite Louisiana-style hot sauce.
  • Cajun Shrimp: Add cooked Cajun-seasoned shrimp to the skillet just before serving for a hearty seafood variation.
  • Bacon: Sprinkle crispy crumbled bacon over the finished corn for a smoky, savory addition.
  • Extra Cheesy: Add Monterey Jack, mozzarella, or sharp cheddar along with the Parmesan.
  • Grilled Corn: Grill the corn first until lightly charred, then toss it in the prepared Cajun cream sauce.
  • Creole Style: Add a small amount of Creole mustard and sliced green onions for an extra layer of tangy flavor.

Tips

  • Use fresh sweet corn when available for the juiciest texture and best contrast with the spicy cream sauce.
  • Keep the heat at medium-low once the cream is added. Boiling heavy cream aggressively can cause the sauce to separate.
  • Parmesan can add considerable saltiness, so taste the finished sauce before adding extra salt.
  • Turn the corn several times during cooking to ensure every side gets coated in the seasoned sauce.
  • If the sauce becomes too thick, stir in a splash of chicken broth or cream until it reaches your preferred consistency.
  • For an especially rich finish, swirl an additional tablespoon of cold butter into the sauce immediately before serving, then sprinkle the corn with extra Cajun seasoning and Parmesan.
