Instructions
1. Preheat the oven. Set your oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish with cooking spray or a small amount of oil.
2. Sauté the onion. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes, stirring occasionally, until softened and fragrant.
3. Brown the ground beef. Add the ground beef to the skillet. Cook for approximately 6–8 minutes, breaking it into small crumbles with a spatula, until completely browned. Drain any excess grease.
4. Season the beef. Sprinkle the taco seasoning over the cooked meat and pour in the water. Stir well and simmer for 4–5 minutes, allowing the liquid to reduce and the seasoning to coat the beef.
5. Add the vegetables. Stir in the drained diced tomatoes, Rotel tomatoes with green chilies, and optional black beans and corn. Cook for another 1–2 minutes until everything is evenly combined. Taste and adjust the seasoning if necessary.
6. Prepare the creamy cheese mixture. In a medium mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy, then stir in ½ cup of the shredded Mexican-style cheese.
7. Create the crunchy base. Spread the crushed tortilla chips or Doritos evenly across the bottom of the prepared baking dish.
8. Add the first beef layer. Spoon half of the seasoned ground beef mixture over the crushed chips, spreading it into an even layer.
9. Spread the creamy filling. Carefully spoon the cream cheese and sour cream mixture over the beef. Use a spatula to spread it evenly without disturbing the layers too much.
10. Add the remaining beef. Spoon the rest of the seasoned beef mixture over the creamy layer.
11. Top with cheese. Sprinkle the remaining 2½ cups of shredded Mexican-style cheese evenly over the entire casserole.
12. Bake covered. Loosely cover the baking dish with aluminum foil and bake for 15 minutes. If possible, keep the foil from touching the cheese.
13. Finish uncovered. Remove the foil and continue baking for another 10–15 minutes, until the cheese is completely melted, bubbling, and lightly golden around the edges.
14. Rest before serving. Remove the casserole from the oven and allow it to rest for 5–10 minutes. This helps the creamy layers settle and makes serving easier.
15. Garnish and serve. Sprinkle with fresh cilantro, sliced green onions, or diced tomatoes. Serve hot with guacamole, salsa, jalapeños, or extra sour cream.

Tips
-
Drain the ground beef well. Removing excess grease prevents the casserole from becoming oily and helps maintain a creamy, balanced texture.
-
Drain the tomatoes thoroughly. Too much liquid can make the casserole watery and soften the tortilla chips excessively.
-
Soften the cream cheese first. Room-temperature cream cheese blends more smoothly with sour cream, creating a velvety filling without lumps.
-
Use freshly shredded cheese. It generally melts more smoothly than packaged pre-shredded cheese and creates a creamier topping.
-
Choose your tortilla chips carefully. Regular tortilla chips provide a more traditional corn flavor, while nacho cheese Doritos add an extra layer of cheesy seasoning.
-
Keep the casserole loosely covered during the first stage of baking. This helps heat the filling evenly without allowing the cheese to brown too quickly.
-
For extra-golden cheese, broil the casserole for 1–2 minutes at the end, watching carefully to prevent burning.
-
Let the casserole rest before slicing. A short resting period helps the layers hold together and makes it easier to serve neat portions.
-
Add fresh toppings just before serving. Cilantro, green onions, avocado, and fresh tomatoes provide a refreshing contrast to the rich, cheesy filling.
-
For the best crunchy texture, sprinkle a handful of freshly crushed tortilla chips over each serving immediately before eating.
