Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the ground beef and cook until browned, breaking it into small crumbles with a spoon. Drain any excess grease if necessary.
- Stir in the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Cook for an additional 2 minutes, allowing the spices to coat the beef evenly.
- In a small bowl, whisk together the mayonnaise, sour cream, salsa, taco seasoning, lime juice, garlic powder, and smoked paprika until smooth and creamy. Refrigerate until ready to use.
- Heat a nonstick skillet over medium heat. Sprinkle a thin, even layer of cheddar and Monterey Jack cheese directly onto the skillet. Once the cheese begins to melt and turns golden around the edges, gently press a hard taco shell onto the cheese. Allow it to cook for about 1 minute until the cheese becomes crisp and adheres to the shell. Repeat with the remaining taco shells.
- Fill each crispy cheese-crusted taco shell with the seasoned ground beef.
- Drizzle generously with the creamy taco sauce and add your favorite toppings such as lettuce, tomatoes, cilantro, jalapeños, onions, or avocado.
- Serve immediately while the tacos are hot, crispy, and the cheese crust is at its crunchiest.
Variations
- Replace the ground beef with ground turkey, chicken, or pork for a lighter alternative.
- Add black beans or pinto beans to the beef mixture for extra protein and fiber.
- Spice things up by mixing diced chipotle peppers or hot sauce into the creamy taco sauce.
- Swap Monterey Jack for Pepper Jack to add a subtle kick of heat.
- Make it low-carb by using cheese taco shells or lettuce wraps instead of hard taco shells.
- Top with pickled red onions, cotija cheese, or fresh pico de gallo for extra flavor.
Tips
- Freshly shred your cheese for the best melting texture and crispiest cheese crust.
- Let the cheese become deep golden before placing the taco shell on top to achieve maximum crunch.
- Warm the taco shells briefly before coating them with cheese to help prevent cracking.
- Prepare the taco sauce ahead of time and refrigerate for 30 minutes to allow the flavors to develop.
- Serve the tacos immediately after assembling to keep the shells crisp and the cheese crust crunchy.
- Pair with Mexican rice, refried beans, tortilla chips, or fresh guacamole for a complete meal.
