Instructions
- Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
- Brown the ground beef in a large skillet over medium heat. Drain any excess grease.
- Stir in the taco seasoning and water. Simmer for 5 minutes until thickened.
- Lightly brush both sides of the tortillas with oil or spray with cooking spray.
- Arrange the tortillas on the prepared baking sheets and bake for 5–7 minutes per side, flipping halfway through, until crisp and golden.
- Warm the refried beans until easy to spread.
- Spread a layer of refried beans over six crispy tortillas.
- Divide the seasoned beef evenly over the beans.
- Top each with another crispy tortilla.
- Spread enchilada sauce over each top tortilla.
- Sprinkle generously with the Mexican blend cheese and cheddar cheese.
- Bake for 8–10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes and sliced green onions.
- Slice each pizza into quarters and serve immediately while hot and crispy.
