Crockpot Cabbage Roll Casserole delivers all the hearty, comforting flavors of traditional stuffed cabbage rolls without the time-consuming work of filling and rolling individual cabbage leaves. Ground beef, tender cabbage, rice, and a savory tomato sauce slowly cook together into an easy one-pot family dinner.
The combination of browned ground beef, onion, and garlic creates a flavorful base, while smoked paprika, thyme, Italian seasoning, and Worcestershire sauce add savory depth. As the casserole cooks, the cabbage becomes wonderfully tender and absorbs the rich tomato and beef flavors.
Uncooked long-grain rice makes this dish especially convenient because it cooks right in the slow cooker. It absorbs the seasoned broth and tomato juices, giving the casserole the hearty texture associated with classic cabbage rolls while eliminating the need to prepare the rice separately.
This is an excellent make-ahead meal for busy days when you want dinner waiting with minimal last-minute preparation. Finish each serving with fresh parsley and pair it with crusty bread, a simple green salad, or a spoonful of sour cream for a satisfying comfort-food meal.
Servings: 6 servings
Prep Time: 15 minutes
Cook Time: 5–6 hours on LOW or 3–4 hours on HIGH
Total Time: Approximately 5 hours 15 minutes
Ingredients
- 1½ lbs (680 g) ground beef
- 1 medium green cabbage, roughly chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 1 (28-ounce) can diced tomatoes, with juices
- 1 (15-ounce) can tomato sauce
- 2 tablespoons tomato paste
- 1½ cups beef broth, plus more if needed
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon dried thyme
- 1 teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Place a large skillet over medium heat. Add the ground beef and diced onion and cook until the beef is browned and the onion has softened, breaking the meat into small crumbles as it cooks.
- Drain off any excess grease. Add the minced garlic and cook for about 30 seconds, stirring frequently, until fragrant.
- Arrange half of the chopped cabbage across the bottom of a large slow cooker.
- Spoon half of the cooked beef mixture over the cabbage. Sprinkle half of the uncooked rice evenly over the beef, followed by half of the diced tomatoes.
- Repeat the layers with the remaining cabbage, beef, rice, and diced tomatoes.
- In a bowl or large measuring jug, whisk together the tomato sauce, tomato paste, beef broth, Worcestershire sauce, smoked paprika, Italian seasoning, thyme, salt, and black pepper.
- Pour the tomato mixture evenly over the ingredients in the slow cooker. Gently press everything down so the rice is exposed to enough liquid, but avoid vigorously stirring the layers together.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the cabbage is tender and the rice is fully cooked.
- Check the casserole toward the end of the cooking time. If the rice is still firm and most of the liquid has been absorbed, add up to ½ cup hot beef broth and continue cooking until the rice is tender.
- Gently stir the finished casserole, taste, and adjust the salt and black pepper as needed.
- Sprinkle generously with chopped fresh parsley and serve hot.
Variations
- Beef and Pork: Replace half the ground beef with ground pork for a filling closer to some traditional cabbage roll recipes.
- Turkey: Substitute ground turkey for the beef for a lighter variation.
- Extra Tomato: Add another tablespoon of tomato paste for a deeper, more concentrated tomato flavor.
- Spicy: Add crushed red pepper flakes or cayenne pepper to the tomato sauce.
- Brown Rice: Brown rice can be used, but it generally requires additional cooking time and liquid, so monitor it carefully.
- Cheesy: Sprinkle shredded mozzarella or cheddar over individual servings for a rich, melty finish.
Tips
- Brown the ground beef before adding it to the slow cooker. This improves both the flavor and texture while allowing you to drain excess fat.
- Chop the cabbage into similarly sized pieces so it cooks evenly.
- Make sure the uncooked rice is surrounded by sufficient liquid. Rice sitting completely above the liquid may remain firm.
- Avoid repeatedly lifting the slow-cooker lid, as releasing heat can significantly increase cooking time.
- Slow cookers vary in temperature, so begin checking the rice and cabbage toward the lower end of the suggested cooking range.
- If the rice absorbs the cooking liquid before becoming tender, add about ½ cup of hot beef broth rather than cold broth and continue cooking.
- Let the finished casserole stand for 5–10 minutes with the slow cooker switched off. The rice will continue absorbing some of the sauce, creating a thicker, heartier consistency.
