Ingredients

  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1/2 cup low-fat cottage cheese
  • 1 cup reduced-fat shredded Mexican cheese blend
  • 4 high-protein or whole wheat tortillas
  • Cooking spray or 1 teaspoon butter

  • Fresh cilantro
  • Sliced jalapeños

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the lean ground beef and cook until browned, breaking it into small crumbles as it cooks. Drain any excess grease if needed.
  2. Stir in the chili powder, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Cook for 2 minutes, stirring to evenly coat the beef with the seasonings.
  3. Remove the skillet from the heat and stir in the cottage cheese until fully combined and creamy.
  4. Lay one tortilla on a clean work surface. Sprinkle one-quarter of the shredded cheese over half of the tortilla, then add half of the beef mixture. Top with another quarter of the cheese and fold the tortilla over, or use a second tortilla if preferred. Repeat with the remaining ingredients.
  5. Lightly coat a large skillet or griddle with cooking spray or butter. Cook each quesadilla over medium heat for 3 to 4 minutes per side, or until golden brown and crispy with the cheese fully melted.
  6. Transfer to a cutting board and let rest for 1 to 2 minutes before slicing into wedges.
  7. Serve warm with salsa, Greek yogurt, guacamole, pico de gallo, cilantro, or jalapeños.
